The Magic Food Gadget Meets Cornmeal

I am having a lot of fun experimenting with the food gadget!  This past week, I got a real good deal on cornmeal at Whole Foods and decided that I would try making a cornbread.  I used the gadget to find recipes using cornmeal and honey as ingredients and discovered a recipe that my husband and I love.  (Yes, love---we have already made it twice in the course of a week!)



I ended up using the Moist Honey Cornbread recipe found on www.grouprecipes.com.  The recipe is true to its name--the cornbread is moist, in the cornbread sense of the word, of course!  The ingredients include cornmeal, flour, baking soda, baking powder, sugar, milk, honey, eggs, olive oil (actually, it calls for vegetable oil but I substituted).  The recipe was very easy and quick.   The result: moist, fluffy, and delicious!

I did learn a little secret from this recipe as well---if you oil your measuring cup before measuring the honey, the honey will slip right out.  A cool trick that I will definitely use in the future!
