Refreshing Chicken Avocado Salad

With all of the wonderful weather now and on the horizon, it is time to start thinking cool and refreshing salads! Last night, I made a really simple chicken and avocado salad. It is a great way to use up chicken leftovers and spice them up!



Ingredients:

1 cooked chicken breast
1/4 cup chopped white onion
6-8 diced capellini tomatoes
1/4 cup fresh cilantro
Juice of 2 limes
1 Tbsp sugar
1 Tsp Iguana Jacks jalapeno pepper sauce
1 small peeled and diced avocado

Directions:

Pull chicken into chunks.  Combine all ingredients except avocado in bowl. Fold the avocado gently into the mixture.

You can serve this with tortilla chips or eat in a tortilla.

Some notes: You can easily add more chicken to this recipe. I made it with one breast last night but I think that the mixture would have been fine with 2.  Also, you can try it with a little less lime juice and add more to your taste. I am a big lime fan so I went in with gusto!
