White Bean Salad: Perfect for Summer Barbecues

Earlier this year, I discovered a simple and tasty White Bean Salad recipe by Cooking Light that is very easy but tastes great. The original recipe actually uses roasted chicken. However, I have found that the recipe holds it own without the chicken, making it a great side or a meatless meal on its own!

I have made this salad for a couple of BBQs now and it has been quite the hit! Take a look below:


The salad is pretty colorful and is a good opportunity to use fresh tomatoes and basil from your garden. The dressing is a light dijon-vinaigrette. Check on Cooking Light's website for this recipe and other great recipes!
