Whole Wheat Pancakes {Munchie Monday}

I have literally had my pancake recipe since Junior High aka a very long time ago. I first used it in Home Ec class. Ever since then, it has been one of my favorites. Over the years, I have tweaked it. I now have a recipe that is a little healthier but still yummy! We just had it tonight with some raspberries. Delicious!


Ingredients:

3/4 cups all-purpose flour
3/4 cups whole wheat flour
3 tsp baking powder
1 Tbsp sugar
1 tsp cinnamon
1/2 tsp salt
1 beaten egg white
1 3/4 cups 2% milk
2 Tbsp olive oil
1 tsp vanilla

Directions:

Mix flours, baking powder,  sugar, cinnamon and a salt in a bowl. Lightly beat the egg white in a separate bowl. Combine milk, olive oil and vanilla with the egg white. Next, add the dry ingredients to the wet and stir together to mix.

Warm a greased frying pan over medium heat. Use a spoon or ladle to pour some batter onto the frying pan. When the pancake is puffed and full of bubbles with the edges cooked, flip over. When the other side is lightly browned, your pancake is done.
