Double Chocolate Avocado Drop Cookies--Delish!

For our avocado party, I was determined to find an intriguing avocado dessert concoction to serve. I stumbled on the Dark Chocolate Avocado Recipe at The Greatist and had to give it a whirl. I made a few changes and whipped up something that party guests really enjoyed. Everyone was surprised that the delicious result contained avocado--including my toughest judge, Mini-Mel.

Here is the recipe we have all been waiting for:
Delicious drop cookies made with avocado!

Ingredients:

1/2 cup mashed avocado
1/2 bag dark chocolate chips  (150 grams)
3/4 cup whole wheat flour (yes, guests, I snuck that in!)
1/2 tsp baking soda
1/4 cup honey
2 tsp pure vanilla extract
1 tsp apple cider vinegar
2 tsp cinnamon
2 Tbsp unsweetened cocoa powder
1/4 cup water



Directions:

Preheat oven to 350 F.

Combine avocado and honey with a food processor. Add vanilla, vinegar, cinnamon, cocoa powder, and baking soda. Combine with the food processor. Then, add the flour and combine with the food processor until the ingredients are evenly distributed within a smooth batter.

Next, remove the batter from the food processor and put it into a bowl. I incorporated some water at this point because the "batter" was way too dry. Then, I folded in the chocolate chips.

Then, I prepared a baking sheet by spraying it with cooking spray. I dropped the cookies onto the sheet. (The cookies will not spread. If you would like them to be in a more cookie-like shape, you will need to form them.)

I put the cookies in the oven and baked them for 10 minutes. I turned the sheet once at the 5 minute mark. You will need to let the cookies sit a few minutes before you can transfer them to the cooling rack.

By making drop cookies, I was able to make 2 dozen cookies with this recipe.
