Blueberry Chocolate Chip Muffins

Since we just picked blueberries, we of course needed to make blueberry muffins. And, since we are living with a 7-year-old, we had to add chocolate chips to said blueberry, muffins--of course! Here is a recipe that I synthesized from a couple that I found. The muffins got a big thumbs up from my husband and myself. My daughter was not a big fan but I think that is because they are a little healthier than she intended!



Ingredients:

1 cup whole wheat flour
2/3 cup white flour
1/4 cup granola
1 tsp baking soda
1/4 tsp salt
1 tsp ground cinnamon
generous 1/4 cup confectioner's sugar
3 large egg whites
1 Tbsp olive oil
1 Tbsp water
2/3 cup thick low fat plain yogurt
1 tsp vanilla extract
3oz/85g blueberries, rinsed and dried
1/4 cup chocolate chips

Directions:

Preheat oven to 375. This recipe will make 12 muffins so put 12 liners in a muffin pan(s).

Sift together flours, baking soda, and salt into a large bowl. Add in granola, cinnamon, and sugar. Mix together.

In another bowl, whisk egg whites. Then, mix in olive oil, water,  yogurt, and vanilla extract. Fold in blueberries.

Add wet mixture to dry and mix until just combined. Fold in chocolate chips. Dust with a little cinnamon and sugar on top. Fill in cups evenly, about 2/3's full. Bake for about 25 minutes. Voila:
