Strawberry Granola Cobbler

With the evenings getting a little brisker, I thought that it was time for a warm dessert! I love cobblers and granola--so I thought that I would mix the two for a tasty concoction. The result--a warm and crunchy berry dessert!

Ingredients:

1.5 cups fresh washed and sliced strawberries
2 Tbsps fresh lemon juice
1Tbsp brown sugar
1 cup granola
1 Tbsp butter
1 Tbsp honey

Instructions:

Mix strawberries, sugar, and lemon juice in a small bowl. Place bowl in refrigerator for a couple of hours.



Next, preheat oven to 350. Put granola in a plastic bag and smash it a little (I used a meat tenderizer). Melt the butter. Mix together the butter, granola, and honey in a small bowl. Split strawberries between 2 small 4x4 baking dishes. Sprinkle the granola mixture on top of each mini cobbler. Bake for 20 minutes. Voila, a warm berry delight!

I did use Cascadian Farm Whole Grain Granola to make our cobblers. Feel free to experiment with other granolas!
