Dijon Potato Salad

Since I am not really a fan of mayonnaise, I set out to find a recipe for potato salad sans mayonnaise. I found one that used a dijon-vinaigrette from CD Kitchen that I used as a base. One thing that I found out about potato salad recipes and certainly is the case with this one--they don't tell you how to cook the potatoes. Of course, that is an important part in making a good potato salad that isn't mush!

Here is what I did:



Ingredients:

2 lbs red potatoes
1/2 large red onion, thinly sliced
1/2 cup sliced black olives
2 green onions, sliced
2 Tbsp olive oil
3 Tbsp red wine vinegar
1 Tbsp Dijon mustard
2 cloves minced garlic
1 tsp fresh rosemary
1/2 tsp salt
1/4 tsp fresh ground pepper



Directions:

First, I washed and quartered my potatoes. Next, I put them in a pot. I filled the pot with cold water until the water barely covered the potatoes. I brought the pot to a boil and let the potatoes boil for 10 minutes. I then tested the potatoes with a fork to make sure they were the desired firmness. Then, I drained them and put them in a cool bowl, placing them in the refrigerator to cool down.

Then, I sliced my red onion, olives, and green onions. To make the vinaigrette, I whisked the next 7 ingredients together in a small bowl. Once the potatoes were cool, I cut them into smaller pieces (my chunks were too large!) Finally, I mixed all of the ingredients together in a large bowl.

The result: a tasty, mayonnaise-less potato salad. This recipe is a keeper!
